Triple J Saipan, Inc. is seeking an experienced Head Cook to oversee food preparation and cooking operations in a dining restaurant. The successful candidate will help manage menu planning, food purchasing, inventory control, kitchen operations, and food safety while ensuring consistent quality and efficient service.

Qualifications:

• High school diploma or equivalent required.
• Minimum 24 months of work experience as a Cook Supervisor in a restaurant or food service establishment.
• Proven ability to perform food preparation and cooking activities in a dining restaurant.
• Ability to design and plan restaurant menus.
• Knowledge of food purchasing and procurement.
• Ability to forecast food preparation requirements based on customer guest flow.
• Knowledge of inventory control procedures, including receiving, storing, rotating, and maintaining food and kitchen supplies.
• Ability to develop inventory methods according to restaurant requirements.
• Knowledge of food safety, sanitation, and hygiene requirements.
• Knowledge of applicable CNMI and local health regulations, as applicable.
• Understanding of nutrition, sanitation, and workplace safety standards.
• Ability to maintain a clean and sanitary kitchen environment.
• Strong organizational, supervisory, and kitchen management skills.
• Willingness to stay updated on the latest food service and culinary industry practices.
• Ability to follow established food handling and workplace safety procedures.

Responsibilities:

• Supervise and perform food preparation and cooking activities in a dining restaurant.
• Plan and coordinate daily food preparation based on expected customer demand.
• Forecast food preparation requirements based on increases or decreases in customer volume.
• Assist in designing and updating restaurant menus.
• Review food purchases and ensure appropriate quantities and quality of ingredients.
• Develop and implement inventory methods based on restaurant operational needs.
• Monitor food and kitchen supply levels.
• Receive, inspect, store, rotate, and maintain food supplies properly.
• Ensure proper portion control and minimize food waste.
• Monitor the quality, freshness, and proper storage of ingredients.
• Maintain clean and sanitary kitchen work areas.
• Ensure kitchen staff follow food handling, sanitation, hygiene, and workplace safety procedures.
• Ensure compliance with applicable food safety and health regulations.
• Follow USDA-prescribed nutrition, sanitation, and safety standards where applicable.
• Keep up to date with current food preparation and restaurant industry practices.
• Assist with kitchen operations during busy periods.
• Coordinate with restaurant management and kitchen personnel to maintain efficient operations.
• Perform other duties related to food preparation and kitchen supervision as assigned.
