HEAD BAKER (Japanese Artisan Bread / Shio Pan)
Qualifications:
- Minimum 5 years of relevant baking experience
- Vocational Diploma / Short Course Certificate or equivalent culinary qualification
- Strong background in artisan bread and pastry production
- Experience in Japanese-style baking techniques is highly preferred
- Proven leadership experience in a bakery or production kitchen
- Knowledge of food safety, hygiene, and HACCP standards
- Ability to manage production targets and maintain consistent quality
- Experience in equipment handling and bakery operations maintenance
- Strong organizational and supply chain coordination skills
Responsibilities:
- Lead the daily production of Shio Pan (Japanese salt bread) with a target output of 1,000+ units per day.
- Develop and design Western-style pastries infused with Japanese flavor profiles such as:
- Stone-ground Uji Matcha
- Hokkaido sweet cream
- Yuzu citrus
- Sakura botanical ingredients
- Execute full bread production processes including mixing, fermentation, proofing, shaping, and baking while ensuring consistency and quality.
- Supervise, train, and mentor bakers and bakery assistants in Japanese artisan baking techniques.
- Ensure strict compliance with food safety, hygiene, and sanitation standards at all times.
- Operate, monitor, and maintain bakery equipment to ensure efficient and safe production.
- Manage inventory, ingredient sourcing, supply chain coordination, and vendor relationships.
- Maintain production schedules to meet daily output targets and customer demand.
- Implement quality control measures to ensure product consistency, presentation, and taste.
- Contribute to menu development and product innovation aligned with brand standards.
