CAS Recruitment Ltd is seeking an experienced and skilled Sushi Chef to join a professional culinary team in Cyprus. The ideal candidate will have extensive experience in authentic Japanese cuisine and modern Japanese fusion, with strong knowledge of sushi preparation, raw fish handling, sushi-rolling techniques, menu development, food cost management, and quality control. Candidates with experience in 4- to 5-star hotels, fine dining restaurants, or high-volume sushi operations are highly preferred.

Qualifications:
- Minimum of 3 years of professional kitchen experience in 4- to 5-star hotels or modern fine dining hot & cold fusion sushi restaurants.
- Must have Certificates of Employment (COE) and pertinent Training Certificates to support the required work experience.
- Relevant experience in authentic Japanese cuisine and Japanese fusion dishes.
- Food Safety Training Certificate; ISO 22000 certification/training is preferred.
- Good knowledge of various types of sushi and sushi-rolling techniques.
- Proven ability to prepare sushi using a variety of main ingredients, seafood, and raw fish.
- Culinary diploma from an accredited school.
- Strong knowledge of Japanese culinary methods, ingredients, food preparation, and presentation.
- Ability to work fast and accurately under pressure, particularly during peak service periods.
- Experience with pre-opening of high-volume operations is an advantage.
- Hands-on, cuisine-oriented primary skill set with strong practical culinary abilities.
- Good understanding of food costing, calculation, portion control, and food cost management.
- Strong knowledge of quality management and quality control procedures.
- Excellent attention to detail and commitment to consistent food quality and presentation.
- Good organizational, teamwork, and time-management skills.
- Good and pleasing personality with a professional approach to customers and colleagues.
- Good English communication skills.
- Must have a newly renewed passport.
- Reliable, disciplined, creative, and able to work effectively in a fast-paced professional kitchen environment.
Responsibilities:
- Prepare and present a wide variety of authentic Japanese sushi and Japanese fusion dishes according to established quality and presentation standards.
- Prepare various types of sushi, including nigiri, maki, uramaki, temaki, sashimi, and other specialty sushi preparations.
- Demonstrate excellent knowledge and execution of sushi-rolling and Japanese culinary techniques.
- Select, prepare, portion, and handle fresh fish, seafood, and other sushi ingredients safely and professionally.
- Ensure proper freshness, quality, storage, and handling of raw fish and other perishable ingredients.
- Create and develop a rich and diverse sushi menu featuring various main ingredients, seafood, and raw fish.
- Develop creative Japanese fusion dishes while maintaining authentic Japanese culinary principles.
- Prepare sauces, seasonings, garnishes, rice, fillings, toppings, and other components required for sushi and Japanese cuisine.
- Ensure sushi rice is prepared, seasoned, and maintained to the required quality and consistency.
- Maintain high standards of food presentation, portion control, flavor, texture, and overall product quality.
- Work efficiently and accurately during busy service periods while maintaining consistent food quality.
- Manage sushi station preparation, mise en place, and service requirements according to daily business volume.
- Monitor ingredient usage and assist in controlling food costs, portion sizes, and wastage.
- Support food cost calculations and contribute to effective food cost management.
- Monitor inventory levels of fish, seafood, rice, vegetables, sauces, and other sushi ingredients.
- Ensure proper storage, labeling, rotation, and handling of ingredients according to food safety requirements.
- Follow strict food safety, hygiene, sanitation, and quality management procedures.
- Maintain proper temperature control and safe handling procedures for raw fish and other potentially hazardous foods.
- Conduct quality checks on ingredients and finished dishes before they are served to customers.
- Maintain a clean, organized, and sanitary sushi preparation and service area.
- Properly clean and sanitize knives, cutting boards, sushi tools, equipment, and workstations.
- Coordinate with other kitchen sections and service staff to ensure smooth and timely operations.
- Assist in training and guiding junior kitchen staff in sushi preparation and Japanese culinary techniques when required.
- Support pre-opening activities, kitchen setup, menu preparation, and operational readiness for high-volume establishments when applicable.
- Follow company recipes, culinary standards, food safety procedures, and quality control requirements.
- Perform other culinary and sushi-related duties assigned by management.
Salary and Benefits:
- Salary starts at Php 66,000.00 gross monthly, more or less.
- Forty-eight (48) Work Hours per week. Six (6) working days in a 7-day schedule.
- Accommodation will be provided.
- Two (2) years contract, renewable.
