Qualifications:
- A minimum of 5 years of working experience is required.
- No minimum educational attainment is required for this position.
- Proven experience as a Sushi Chef or in a similar role specializing in Japanese cuisine.
- Strong knowledge of sushi preparation techniques, seafood handling, and Japanese culinary traditions.
- Expertise in filleting, skinning, slicing, and preparing various types of raw fish and seafood.
- Skilled in preparing and seasoning traditional sushi rice.
- Experience in preparing house-made sauces, garnishes, and Japanese accompaniments.
- Excellent knife-handling skills and attention to detail.
- Thorough understanding of food safety, sanitation, and hygiene standards, particularly for raw seafood products.
- Ability to work efficiently in a fast-paced kitchen environment while maintaining consistency and quality.
Responsibilities:
- Prepare sushi, sashimi, nigiri, maki rolls, and other Japanese dishes according to restaurant recipes and standards.
- Expertly slice, skin, fillet, and portion various types of fish and seafood for food preparation.
- Cook, season, and maintain sushi rice to ensure authenticity, consistency, and quality.
- Prepare house-made sauces, condiments, garnishes, and accompaniments for menu items.
- Create visually appealing and professionally presented dishes that meet restaurant standards.
- Monitor the freshness, quality, and proper storage of seafood, rice, vegetables, and other ingredients.
- Ensure consistency in taste, texture, portion size, and presentation across all menu items.
- Maintain strict compliance with food safety, sanitation, and hygiene regulations.
- Operate and maintain kitchen knives, sushi tools, and food preparation equipment safely and effectively.
- Assist in inventory monitoring, stock rotation, and ingredient requisition to ensure product availability.
- Minimize food waste through proper handling, preparation, and storage practices.
- Collaborate with kitchen staff and management to support smooth kitchen operations and menu development.
