Raumai 18 Ltd is seeking an experienced Processed Meat Production Manager for an overseas work opportunity in Papua New Guinea. The successful candidate will oversee the day-to-day production of processed meat products, manage production schedules and staffing, supervise machinery operations, and ensure that products are manufactured efficiently and consistently according to quality and food safety standards.
PROCESSED MEAT PRODUCTION MANAGER
Qualifications:
- Minimum 3 years of experience in smallgoods production, particularly in processed meat products such as deli meats, cold cuts, sausages, or charcuterie.
- Bachelor’s degree in Food Science, Food Technology, Food Manufacturing, Management, or a related field.
- Must be 25 years old and above.
- Strong practical knowledge of processed meat production and smallgoods manufacturing.
- Experience managing day-to-day production operations, including scheduling, staffing, and machinery operation.
- Experience supervising and managing production workers.
- Knowledge of meat processing equipment and production machinery.
- Understanding of food safety, hygiene, sanitation, and quality control procedures.
- Knowledge of raw material handling, production processes, product storage, and packaging.
- Strong organizational, leadership, and problem-solving skills.
- Ability to manage production schedules and meet daily and weekly targets.
- Good attention to detail and commitment to product quality.
- Ability to work in a fast-paced food manufacturing environment.
- Physically capable of working in a production facility and supervising hands-on operations when required.
- Strong communication and teamwork skills.
- Responsible, reliable, and safety-conscious.
- Ability to work independently and effectively lead a production team.
Responsibilities:
- Manage the daily production operations for processed meat and smallgoods products, including deli meats, cold cuts, sausages, and charcuterie.
- Plan and coordinate daily, weekly, and monthly production schedules according to orders and production requirements.
- Supervise production staff and assign duties according to production schedules and operational needs.
- Monitor staffing levels, attendance, productivity, and overall team performance.
- Train, guide, and supervise employees in proper production procedures, equipment operation, hygiene, and workplace safety.
- Oversee the operation of meat processing and production machinery and equipment.
- Ensure production machinery is operated safely and efficiently according to manufacturer and company procedures.
- Monitor the production process from raw material preparation through processing, cooking, chilling, packaging, and storage.
- Ensure processed meat products meet established quality, consistency, portion, and production specifications.
- Monitor raw material usage, production yields, ingredient requirements, and product losses.
- Coordinate the availability of meat, ingredients, packaging materials, and other production supplies.
- Monitor inventory levels and report shortages or production material requirements to management.
- Ensure proper handling, storage, preparation, and processing of meat products.
- Implement and maintain proper food safety, hygiene, sanitation, and HACCP-related procedures where applicable.
- Monitor production areas to ensure cleanliness and compliance with food safety requirements.
- Conduct regular quality checks and address production or product-quality issues promptly.
- Investigate production problems, identify causes, and implement appropriate corrective actions.
- Coordinate with quality control, maintenance, purchasing, warehouse, and other departments to ensure smooth production operations.
- Monitor equipment condition and coordinate preventive maintenance and repairs when required.
- Minimize production downtime, material waste, product losses, and unnecessary operating costs.
- Maintain accurate production records, reports, schedules, inventory information, and quality documentation.
- Ensure employees follow company policies, standard operating procedures, health and safety requirements, and food handling regulations.
- Promote a safe, clean, organized, and productive working environment.
- Monitor production targets and ensure products are completed within required deadlines.
- Assist management in improving production processes, efficiency, product quality, and operational performance.
- Perform other production management and food manufacturing duties assigned by management.
