Aureol Global Connections is seeking an experienced Head Chef specializing in European/Western Cuisine to lead kitchen operations in a professional hotel or resort environment in Ireland. The successful candidate will oversee food preparation, kitchen staff, menu execution, food quality, hygiene, and overall kitchen performance.

HEAD CHEF

Qualifications:

• Previous experience working in a resort or hotel is required.
• Proven experience as a Head Chef, Executive Chef, or senior culinary management professional.
• Specialization in European/Western Cuisine.
• Strong knowledge of professional kitchen operations and food production.
• Proven ability to lead, supervise, train, and manage kitchen staff.
• Strong knowledge of food safety, hygiene, sanitation, and HACCP standards.
• Excellent culinary, organizational, leadership, and problem-solving skills.
• Strong understanding of menu planning, food costing, inventory control, and kitchen operations.
• Ability to work effectively in a fast-paced hotel or resort environment.
• Excellent communication and teamwork skills.
• Strong attention to food quality, presentation, and guest satisfaction.
• Physically fit and capable of working extended periods in a professional kitchen.
• Must be 49 years old or below.

Responsibilities:

• Lead and manage the daily operations of the hotel or resort kitchen.
• Prepare and oversee the preparation of European and Western cuisine.
• Plan and coordinate food production according to menus, occupancy, events, and service requirements.
• Supervise, train, coach, and motivate chefs, Commis Chefs, and other kitchen staff.
• Ensure consistent food quality, taste, portion control, and presentation.
• Develop and maintain recipes, menus, and food preparation standards.
• Monitor food inventory, stock levels, ordering, and proper storage of ingredients.
• Control food costs and minimize waste while maintaining high-quality standards.
• Ensure compliance with food safety, hygiene, sanitation, and HACCP requirements.
• Inspect kitchen areas, equipment, and food preparation processes to ensure cleanliness and safety.
• Coordinate with restaurant, service, purchasing, and other hotel departments.
• Manage kitchen schedules and allocate duties effectively.
• Ensure kitchen equipment is properly maintained and report defects when necessary.
• Handle operational issues and provide solutions during busy service periods.
• Maintain accurate kitchen records, including inventory, food production, and other required reports.
• Ensure all kitchen activities comply with company policies and hotel or resort standards.
• Lead the kitchen team by setting high standards for professionalism, teamwork, and guest satisfaction.
