EXECUTIVE CHEF (Cook B)
Qualifications:
- Minimum 5 years’ experience as an Executive Chef, with prior roles as Sous Chef and Chef de Partie.
- Proven track record in Asian cuisine.
- Diploma in Culinary Arts preferred; if not, at least 7 years of proven experience in Asian cuisine.
- Strong knowledge of food standards, menu planning, cost control, and inventory management.
- Excellent organizational, interpersonal, and communication skills.
- Proficient in English (verbal and written).
- Ability to thrive in a busy and high-pressure environment.
- Newly renewed passport.
Responsibilities:
- Oversee food production in all areas of the kitchen, maintaining high standards of quality and presentation.
- Develop, plan, and approve daily requisitions, including ordering meats, dairy products, fresh fruits, and vegetables.
- Set minimum inventory levels for perishable items and monitor stock control.
- Recommend food standards, specifications, portion sizes, and pricing in relation to external competition.
- Study, develop, and procure ingredients for new dishes, and discontinue items with low or no sales movement.
- Account for usage, consumption, spoilage, and control of all foodstuffs produced or stored under supervision.
- Assist management in developing new menus and revising existing ones.
- Innovate new products and improve existing recipes, researching modern methods of food preparation.
- Prepare menus for catering events, functions, parties, and other special occasions.
- Ensure proper set-up of functions while adhering to health, safety, and company standards.
- Strictly follow HACCP and GMP procedures to ensure product safety.
- Maintain kitchen equipment in good working order and ensure cleanliness and hygiene at all times.
- Manage procurement and supply orders efficiently.
- Work effectively under pressure in a busy environment, demonstrating adaptability and organizational skills.
- Lead, train, and motivate kitchen staff while fostering teamwork and professionalism.
Salary Offer:
- Salary is €2,823.25 gross monthly more or less.
- Forty-Eight (48) Work Hours/6 days per week.
- Two (2) years contract, renewable.
