Sisban Trofi Food Company is seeking an experienced Head Chef – Chinese Cuisine to lead kitchen operations and oversee the preparation of high-quality Chinese dishes. The successful candidate should have at least two years of food industry experience, strong knowledge of Chinese cuisine, and the ability to lead and coordinate a professional kitchen team.

HEAD CHEF (CHINESE CUISINE)

Qualifications:

  • Minimum 2 years of relevant work experience.
  • At least 2 years of experience in the food industry.
  • Previous experience as a Head Chef, Chinese Chef, or senior Chinese cuisine position is preferred.
  • Must have experience in the same or related field.
  • Must be a graduate of a four-year undergraduate course.
  • Strong knowledge of Chinese cuisine and cooking techniques.
  • Experience with wok cooking and preparation of traditional and modern Chinese dishes.
  • Strong knowledge of food preparation, presentation, and kitchen operations.
  • Knowledge of HACCP, food safety, hygiene, and sanitation standards.
  • Strong leadership and team-management skills.
  • Good communication, organization, and problem-solving skills.
  • Ability to manage kitchen operations in a fast-paced restaurant environment.
  • Strong attention to food quality, consistency, presentation, and cost control.
  • Physically fit and able to work extended hours when required.
  • Willing to be assigned in Riyadh, Saudi Arabia.
  • Male applicants are preferred for this position.

Responsibilities:

  • Lead and supervise the daily operations of the Chinese cuisine kitchen.
  • Plan, organize, and oversee food preparation and cooking activities.
  • Prepare and oversee the preparation of a wide variety of Chinese dishes according to established recipes and quality standards.
  • Develop and maintain consistent recipes, portion sizes, taste, presentation, and food quality.
  • Prepare and supervise the preparation of sauces, marinades, vegetables, meat, seafood, and other Chinese cuisine ingredients.
  • Apply and supervise proper Chinese cooking techniques, including wok cooking, stir-frying, steaming, deep-frying, braising, and other methods.
  • Monitor food quality, cooking temperatures, portion control, and presentation.
  • Create daily production plans and coordinate kitchen activities during service.
  • Assign duties and supervise Commis Chefs, Chef de Partie, kitchen helpers, and other kitchen personnel.
  • Train and guide kitchen staff on recipes, cooking techniques, food preparation, hygiene, and safety.
  • Ensure adequate preparation of ingredients before service to prevent delays.
  • Monitor food inventory and ensure ingredients are available for daily production.
  • Coordinate purchasing requirements and report shortages or quality concerns to management.
  • Control food costs and minimize food waste through proper portioning and inventory management.
  • Maintain high standards of cleanliness and sanitation throughout the kitchen.
  • Ensure compliance with food safety, HACCP, hygiene, sanitation, and workplace safety procedures.
  • Inspect kitchen equipment and ensure it is used properly and maintained in good working condition.
  • Coordinate with restaurant management and service staff to ensure efficient operations.
  • Handle food quality concerns and assist in resolving customer complaints when required.
  • Assist in developing new dishes, menus, and recipes when required.
  • Ensure all kitchen operations comply with company policies and quality standards.
