Qualifications:
- Minimum 5 years of working experience as a Butcher or in a related meat-processing position.
- Vocational Diploma / Short Course Certificate in Food and Beverage Preparation/Service Management or a similar field.
- Experience working in a supermarket, retail butcher shop, wholesale, meat processing facility, or food distribution environment is highly desirable.
- Proven practical experience in meat cutting, trimming, deboning, portioning, and preparation.
- Good understanding of meat quality, freshness, storage, handling, and food safety requirements.
- Ability to prepare different types of meat, including beef, lamb, pork, and poultry.
- Knowledge of proper meat storage temperatures and FIFO stock rotation practices.
- Ability to accurately weigh, label, package, portion, and display meat products.
- Good knife-handling skills and knowledge of safe meat-cutting practices.
- Ability to identify poor-quality, spoiled, damaged, or contaminated meat products.
- Good understanding of hygiene, sanitation, workplace safety, and proper food handling procedures.
- Ability to work effectively with Purchasing, Warehouse, Sales, and Store Operations teams.
- Strong attention to detail, accuracy, product quality, and cleanliness.
- Good organizational and inventory-control skills.
- Physically fit and capable of standing for extended periods and handling meat products and equipment.
- Reliable, hardworking, disciplined, and able to work efficiently in a fast-paced retail or food-processing environment.
- Good communication and teamwork skills.
Responsibilities:Â
- Cut, trim, debone, portion, and prepare meat products according to company specifications and customer requirements.
- Prepare beef, lamb, pork, poultry, and other meat products as required.
- Perform accurate meat cutting and portioning to minimize waste and maximize product yield.
- Ensure meat products are properly weighed, labelled, packaged, priced, and displayed.
- Maintain high standards of meat quality, freshness, cleanliness, and presentation.
- Inspect meat products for quality, freshness, color, texture, odor, and signs of spoilage or contamination.
- Ensure meat is stored at the appropriate temperature and handled in accordance with food safety requirements.
- Maintain proper stock rotation using FIFO (First In, First Out) principles.
- Monitor meat stock levels and communicate replenishment requirements to the appropriate department.
- Assist in receiving and checking meat deliveries to verify quantity, quality, condition, and specifications.
- Properly handle, store, and organize incoming meat products to maintain freshness and prevent contamination.
- Report damaged, expired, contaminated, or poor-quality meat products immediately to management.
- Maintain accurate records of meat usage, wastage, stock levels, and product requirements.
- Monitor customer demand and provide recommendations regarding popular meat cuts and product requirements.
- Assist customers with selecting appropriate meat cuts and provide basic information about available products when required.
- Prepare special cuts, portions, and customer orders according to specifications.
- Maintain clean and sanitized cutting tables, knives, equipment, storage areas, display cases, and workstations.
- Properly clean and maintain butcher knives, cutting equipment, machines, and other tools.
- Follow established food safety, hygiene, health, and workplace safety procedures at all times.
- Use appropriate personal protective equipment (PPE) and safe handling practices when working with knives and meat-processing equipment.
- Minimize product waste through proper cutting, trimming, portioning, storage, and handling techniques.
- Assist with product range reviews and recommend new meat products, cuts, or preparation options where appropriate.
- Coordinate effectively with Purchasing, Warehouse, Sales, and Store Operations teams.
- Ensure meat displays remain adequately stocked, attractive, and properly maintained.
- Perform other butchering, meat preparation, and store-related duties assigned by management.
