Linda & Lydia Employment Agency (LLEA) is seeking a skilled and dependable Assistant Chef to join a professional Western restaurant kitchen in Brunei. The ideal candidate should have 2–3 years of relevant kitchen experience, knowledge of Western cooking techniques, and the ability to assist with food preparation, cooking, kitchen operations, and maintaining high standards of food quality and hygiene.
ASSISTANT CHEF
Qualifications:
- Open to Male or Female applicants.
- 2–3 years of experience in a Western restaurant kitchen.
- Knowledgeable in Western cooking techniques, food preparation, and kitchen equipment.
- Diploma or certificate in Culinary Arts, Hospitality, or a related field.
- Good understanding of basic food preparation, cooking methods, portioning, and food presentation.
- Ability to follow recipes, instructions, and established kitchen procedures accurately.
- Ability to work efficiently in a fast-paced restaurant kitchen.
- Good teamwork and communication skills when working with chefs and other kitchen staff.
- Strong attention to cleanliness, food safety, hygiene, and kitchen organization.
- Ability to operate and maintain kitchen equipment safely and responsibly.
- Physically capable of standing for extended periods and performing food preparation and kitchen duties.
- Reliable, hardworking, disciplined, and willing to learn and follow instructions.
Responsibilities:
- Assist the Head Chef and senior kitchen staff with daily kitchen operations and food production.
- Prepare and cook a variety of Western dishes according to established recipes and restaurant standards.
- Perform basic food preparation, including washing, peeling, cutting, slicing, chopping, marinating, seasoning, and portioning ingredients.
- Follow standardized recipes, cooking methods, portion sizes, and presentation requirements.
- Apply appropriate Western cooking techniques to achieve consistent food quality and taste.
- Assist with mise en place and ensure all ingredients are properly prepared before service.
- Monitor cooking times, temperatures, textures, and presentation of food during preparation.
- Assist senior chefs during busy service periods to ensure orders are completed accurately and on time.
- Maintain proper organization of ingredients, prepared food, utensils, and kitchen equipment.
- Operate kitchen equipment safely and correctly according to established procedures.
- Assist with receiving, checking, storing, and properly handling food supplies.
- Ensure ingredients are stored correctly and rotated properly to maintain freshness and minimize waste.
- Maintain cleanliness and sanitation of workstations, kitchen equipment, utensils, preparation areas, and storage spaces.
- Follow food safety, hygiene, sanitation, and workplace safety procedures at all times.
- Monitor the quality and freshness of ingredients and report any damaged, spoiled, or unsuitable products.
- Assist with portion control and minimize food waste through proper preparation and storage.
- Coordinate with other kitchen staff to maintain smooth and efficient kitchen operations.
- Help prepare the kitchen before service and clean and organize the work area after operations.
- Report equipment problems, ingredient shortages, or other kitchen concerns to the Chef or supervisor.
- Support the kitchen team in maintaining consistent food quality and professional service standards.
- Perform other cooking, food preparation, and kitchen duties as assigned by management.
