SUSHI MASTER

Qualifications:

• Male applicants are preferred.
• Applicants aged 25 to 45 years old.
• At least five (5) years of professional experience as a Sushi Chef or Sushi Master.
• Extensive knowledge of Japanese cuisine, particularly sushi and sashimi preparation.
• Skilled in preparing various types of sushi, including nigiri, maki, temaki, and specialty rolls.
• Knowledge of proper fish selection, handling, cutting, and storage techniques.
• Familiarity with Japanese culinary traditions, food presentation, and sushi preparation standards.
• Good understanding of food safety, sanitation, and proper food handling procedures.
• Good communication and interpersonal skills.
• Ability to work efficiently in a fast-paced kitchen environment and coordinate with other kitchen staff.
• Passport valid for at least three (3) years.

Responsibilities:

• Prepare and present different varieties of sushi, sashimi, and other Japanese dishes according to restaurant standards.
• Select, inspect, clean, and prepare fresh fish, seafood, vegetables, and other sushi ingredients.
• Prepare sushi rice and maintain the proper texture, seasoning, and consistency.
• Cut and portion fish and seafood accurately for sushi and sashimi preparation.
• Create traditional and specialty sushi rolls, nigiri, maki, temaki, and other menu items.
• Ensure proper presentation, portion control, taste, and quality of all prepared dishes.
• Maintain freshness and proper storage of seafood, ingredients, and prepared food items.
• Follow food safety, hygiene, sanitation, and temperature control standards.
• Maintain cleanliness and organization of the sushi preparation station, kitchen tools, and equipment.
• Monitor ingredient inventory and inform the supervisor when supplies need replenishment.
• Coordinate with other chefs and kitchen staff to ensure timely preparation and service.
• Assist in developing new sushi dishes and improving menu offerings when required.
• Perform other related sushi preparation and kitchen duties as assigned.
