Australian Skilled Migration is seeking an experienced Retail Butcher with European retail butchery experience to work in Australia. The successful candidate will be responsible for cutting, trimming, deboning, portioning, packaging, and preparing various meat products for retail sale. The role requires strong practical butchery skills, knowledge of meat handling and food safety, excellent attention to detail, and experience working in a retail meat shop environment.

RETAIL BUTCHER (European Experience Required)

Qualifications:

• Minimum of 5 years of relevant experience in the same field is required.
• European retail butchery experience is required.
• Must have completed at least 1 year of college or a 1-year vocational course with Transcript of Records (TOR).
• Must be currently working in a retail meat shop.
• Proven hands-on skills in meat cutting, trimming, and portioning.
• Skilled in boning and deboning various cuts of meat.
• Knowledgeable in proper meat handling, storage, preparation, and temperature control.
• Experienced in weighing, portioning, and packaging meat products for retail sale.
• Practical experience working in a retail meat shop environment.
• Knowledge of cleanliness, hygiene, sanitation, and food safety standards.
• Able to assist customers with meat selection, product information, and special orders.
• Skilled in the safe use and proper maintenance of butcher knives, cutting equipment, grinders, slicers, scales, and other tools.
• Strong attention to detail and commitment to product quality and accurate portioning.
• Good physical stamina and ability to perform prolonged standing and hands-on butchery work.
• Reliable, hardworking, organized, and able to work effectively as part of a retail team.

Responsibilities:

• Cut, trim, portion, and prepare various types and cuts of meat according to retail requirements.
• Perform accurate boning and deboning of different meat cuts using appropriate butchery techniques.
• Prepare meat products for display, sale, customer orders, and further processing.
• Weigh and portion meat products accurately according to customer orders and retail specifications.
• Package and label meat products properly for retail sale.
• Assist customers with meat selection and provide appropriate information regarding available cuts and products.
• Prepare customized meat orders according to customer requirements.
• Maintain proper meat handling, storage, temperature control, and preparation practices.
• Inspect meat products for quality, freshness, appearance, and suitability for sale.
• Maintain clean and hygienic workstations, cutting areas, display areas, tools, and equipment.
• Follow food safety, sanitation, hygiene, and workplace health and safety procedures.
• Operate butcher knives, cutting tools, grinders, slicers, scales, and other relevant equipment safely.
• Sharpen, clean, inspect, and properly maintain butcher tools and equipment.
• Minimize product waste through efficient cutting, trimming, portioning, and utilization of meat.
• Rotate and organize meat products according to proper storage and stock-handling procedures.
• Monitor stock levels and inform supervisors when additional meat or supplies are required.
• Maintain accurate weights, portions, product presentation, and labeling.
• Assist with cleaning and sanitizing equipment and facilities at the end of production or service periods.
• Follow retail procedures and maintain professional customer service standards.
• Perform other retail butchery and meat preparation duties as assigned.
