Executive Chef (Manager Food Operations)
Qualifications:
- Minimum of 5 years of proven experience in a high-volume galley or food and beverage operation.
- Extensive experience managing large culinary teams in hotels, resorts, cruise ships, or large-scale hospitality operations.
- Proven ability to supervise the preparation of special dietary meals and manage food allergy requirements.
- Strong leadership skills with the ability to coordinate the operation of multiple galleys and food outlets.
- Excellent understanding of food cost control, budgeting, forecasting, and financial performance.
- Comprehensive knowledge of food and beverage products, culinary techniques, kitchen equipment, and production systems.
- Strong technical and operational understanding of shipboard food and beverage operations.
- Knowledge of HACCP, USPH, food safety regulations, sanitation standards, and environmental compliance.
- Excellent organizational, analytical, decision-making, and problem-solving skills.
- Outstanding leadership, communication, and interpersonal skills in a multicultural environment.
- Ability to work under pressure while maintaining the highest standards of quality and guest satisfaction.
- Willing to work onboard Disney Cruise Line under a rotational contract.
Responsibilities:
- Lead and manage all galley operations, ensuring efficient food production across all restaurants, buffets, specialty dining venues, and room service.
- Supervise and coordinate the activities of Executive Sous Chefs, Sous Chefs, Chef de Parties, Cooks, Bakers, Pastry Chefs, and all galley personnel.
- Ensure all meals are prepared and presented according to Disney Cruise Line’s culinary standards and recipes.
- Oversee the accurate preparation and service of special dietary meals, allergy-sensitive dishes, and other guest dietary requirements.
- Monitor food quality, consistency, portion control, and presentation throughout all food outlets.
- Develop production schedules and coordinate kitchen operations to ensure timely and efficient meal service.
- Manage food inventory, ordering, receiving, storage, and stock rotation while minimizing waste.
- Calculate food cost projections, monitor budget performance, and implement cost-control strategies without compromising quality.
- Ensure compliance with HACCP, USPH (United States Public Health), maritime sanitation regulations, and company food safety standards.
- Monitor and implement proper garbage separation, recycling, and waste disposal procedures in accordance with environmental and shipboard regulations.
- Oversee preventive maintenance and proper use of galley equipment, tools, and kitchen facilities.
- Conduct regular inspections of galleys to ensure cleanliness, sanitation, and operational readiness.
- Recruit, train, coach, mentor, and evaluate culinary team members to support professional development and operational excellence.
- Collaborate closely with Food & Beverage management, hotel operations, provisioning, and other departments to ensure seamless service delivery.
- Prepare operational reports, inventory records, production summaries, and performance evaluations.
- Respond promptly to guest feedback and continuously improve culinary offerings and service standards.
- Perform other food operations management duties assigned by senior shipboard leadership.
