Assistant Chef
Qualifications:
- Must be a graduate of a four-year course.
- Must have relevant culinary experience aboard a cruise ship.
- Must hold an NC III in Ships’ Catering or Commercial Cooking.
- Must have practical knowledge and hands-on experience in food preparation and kitchen operations.
- Knowledge of professional cooking techniques, kitchen procedures, and food preparation methods.
- Ability to follow recipes, instructions, portion standards, and food presentation requirements.
- Good understanding of food safety, sanitation, hygiene, and proper food handling practices.
- Ability to work effectively in a professional and fast-paced culinary environment.
- Strong teamwork and communication skills.
- Good attention to detail, organization, and time management.
- Physically capable of performing kitchen duties and standing for extended periods.
- Reliable, hardworking, disciplined, and willing to follow company policies and kitchen procedures.
Responsibilities:
- Assist the Head Chef, Sous Chef, and other senior kitchen staff with daily culinary operations.
- Prepare ingredients for cooking, including washing, peeling, cutting, chopping, portioning, and measuring.
- Assist in preparing and cooking dishes according to established recipes and kitchen standards.
- Support food preparation for different sections of the kitchen as assigned.
- Ensure proper portioning, presentation, and quality of prepared food.
- Follow recipes, cooking methods, temperatures, and preparation procedures accurately.
- Assist with mise en place before meal service and maintain adequate preparation throughout service.
- Monitor the quality, freshness, and proper storage of ingredients and prepared food.
- Maintain cleanliness and organization of workstations, kitchen equipment, utensils, and storage areas.
- Follow proper food handling, sanitation, hygiene, and workplace safety procedures.
- Assist with receiving, checking, storing, and organizing kitchen supplies and ingredients.
- Minimize food waste through proper preparation, portioning, storage, and ingredient handling.
- Work efficiently and calmly during busy service periods and high-volume kitchen operations.
- Coordinate with other kitchen team members to ensure timely and smooth food service.
- Assist in checking prepared dishes before service to ensure they meet quality and presentation standards.
- Report equipment problems, ingredient shortages, food-quality concerns, or other kitchen issues to the appropriate supervisor.
- Follow all company policies, kitchen procedures, and instructions from senior culinary staff.
- Assist with cleaning and closing procedures at the end of service.
- Perform other kitchen and food preparation duties assigned by management.
