Sous Chef

Qualifications:

• At least 3 years of international culinary experience.
• Experience in luxury hotels or cruise ships is highly preferred.
• Must have at least 2 years of experience with one employer.
• Must have experience at Chef de Partie level or higher.
• Cookery NC II is preferred.
• Existing NC III in Food Production, Commercial Cooking, or Ships’ Catering is strongly preferred.
• A completed 3-year Bachelor’s Degree in Culinary Arts is also strongly preferred.
• Strong knowledge of professional food preparation and cooking techniques.
• Good understanding of food safety, sanitation, and hygiene standards.
• Ability to supervise and work effectively with a multicultural kitchen team.
• Strong organizational and time-management skills.
• Good communication and leadership skills.
• Strong attention to detail and commitment to food quality.
• Ability to work under pressure in a fast-paced kitchen environment.
• Willingness to work shifts, weekends, holidays, and overtime when required.

Responsibilities:

• Assist the Executive Chef or Head Chef in managing daily kitchen operations.
• Supervise and coordinate kitchen staff during food preparation and service.
• Prepare and cook dishes according to established recipes and quality standards.
• Ensure proper food preparation, portioning, cooking, plating, and presentation.
• Maintain consistent standards for taste, quality, freshness, and presentation.
• Assist in planning daily menus, food preparation, and kitchen production.
• Monitor food preparation and cooking processes to ensure timely service.
• Guide and train junior kitchen staff and other culinary team members.
• Ensure proper use and maintenance of kitchen equipment and utensils.
• Monitor ingredient quality, quantity, freshness, and proper storage.
• Assist with inventory control and report shortages or damaged supplies.
• Minimize food waste through proper preparation, storage, and portion control.
• Maintain high standards of food hygiene, sanitation, and kitchen cleanliness.
• Ensure compliance with food safety regulations and workplace health and safety procedures.
• Coordinate with other kitchen sections and service personnel during busy operations.
• Help maintain smooth kitchen operations during high-volume service.
• Assist in resolving kitchen-related issues and maintaining workflow efficiency.
• Perform other culinary and supervisory duties assigned by management.
