SEAFOOD COOK (Commis I or Commis II)

Qualifications:

• 21 to 35 years old.
• Experience as a Seafood Cook, Commis I, Commis II, or similar kitchen position is an advantage.
• Knowledge of seafood preparation, handling, storage, and cooking techniques.
• Ability to properly clean, cut, portion, and prepare different types of seafood.
• Basic knowledge of various cooking methods and seafood recipes.
• Able to follow recipes, instructions, portion standards, and plating requirements accurately.
• Strong attention to food quality, taste, texture, freshness, and presentation.
• Knowledge of food safety, hygiene, sanitation, and proper handling of perishable ingredients.
• Physically fit and able to work for extended periods in a fast-paced professional kitchen.
• Hardworking, reliable, disciplined, and willing to learn.
• Good teamwork and communication skills.
  Able to work efficiently under pressure during busy restaurant service.
• Willing to follow instructions and procedures from senior chefs and kitchen management.

Responsibilities:

• Prepare and cook a variety of seafood dishes according to established recipes and restaurant standards.
• Handle, clean, cut, portion, and prepare fresh seafood such as fish, shellfish, prawns, squid, and other seafood products.
• Inspect seafood and other ingredients for freshness, quality, and proper condition before preparation.
• Perform basic seafood preparation, including filleting, trimming, deboning, cleaning, marinating, and portioning.
• Prepare sauces, marinades, stocks, garnishes, vegetables, and other components required for seafood dishes.
• Cook seafood using appropriate methods such as grilling, frying, steaming, roasting, baking, poaching, and sautéing.
• Ensure seafood is cooked to the required temperature, texture, flavor, and presentation standards.
• Follow recipes, portion sizes, cooking procedures, and plating standards accurately.
• Assist with daily mise en place and ensure all seafood ingredients and kitchen equipment are ready before service.
• Maintain consistent quality and presentation of seafood dishes during busy service periods.
• Coordinate with other kitchen sections and service staff to ensure timely preparation and delivery of orders.
• Maintain proper food handling, hygiene, sanitation, and cross-contamination prevention procedures.
• Store seafood and other perishable ingredients at appropriate temperatures and follow proper stock rotation procedures.
• Label and date prepared ingredients and seafood products properly.
• Maintain cleanliness and organization of workstations, refrigerators, freezers, knives, utensils, cooking equipment, and storage areas.
• Monitor ingredient supplies and report shortages or quality concerns to the Chef or supervisor.
• Minimize food waste through proper seafood trimming, portioning, storage, and preparation.
• Follow kitchen safety procedures when handling knives, hot equipment, cooking oils, and other kitchen tools.
• Assist senior chefs and other kitchen staff during preparation and service.
• Perform other cooking and kitchen duties assigned by the Chef or management.
