Sushi Chef

Qualifications:

• Relevant experience as a Sushi Chef, Sushi Cook, Japanese Cuisine Chef, or similar position.
• Good knowledge of sushi preparation techniques, Japanese-style food preparation, and kitchen operations.
• Skilled in preparing sushi rice, rolls, nigiri, sashimi, and other sushi dishes.
• Knowledge of proper fish handling, cutting, portioning, and storage procedures.
• Strong understanding of food safety, hygiene, sanitation, and safe food handling practices.
• Excellent attention to detail and commitment to food quality and presentation.
• Ability to work efficiently and maintain consistent quality during busy restaurant service.
• Customer-oriented attitude with a strong commitment to customer satisfaction.
• Ability to communicate professionally with customers and understand their food preferences and requests.
• Strong team player who can work effectively with kitchen and restaurant staff.
• Strong leadership skills with the ability to guide, support, and motivate junior kitchen personnel.
• Good communication and interpersonal skills.
• Ability to maintain an organized workstation and follow established restaurant procedures.
• Reliable, hardworking, disciplined, and professional.
• Ability to work under pressure and maintain high standards during peak service periods.

Responsibilities:

• Prepare and serve a variety of sushi and Japanese-style dishes according to established recipes and restaurant standards.
• Prepare sushi rice, seafood, vegetables, sauces, garnishes, and other required ingredients.
• Properly slice, portion, and prepare fish and other ingredients for sushi preparation.
• Prepare different types of sushi, including rolls, nigiri, sashimi, and other menu items as required.
• Ensure consistent quality, freshness, taste, portioning, and presentation of all sushi dishes.
• Maintain proper knife handling and food preparation techniques.
• Inspect ingredients for freshness and quality before preparation and service.
• Store seafood, ingredients, and prepared food properly to maintain freshness and food safety.
• Maintain strict standards of food hygiene, sanitation, and safe food handling.
• Keep sushi preparation areas, knives, equipment, utensils, and workstations clean and organized.
• Complete daily mise en place and ensure all ingredients are ready before service.
• Monitor food preparation and service to ensure orders are completed accurately and on time.
• Work closely with other kitchen staff to ensure smooth and efficient restaurant operations.
• Assist in developing or introducing new sushi dishes and menu presentations when required.
• Monitor ingredient usage and help minimize food waste through proper preparation and portion control.
• Assist with inventory monitoring and inform management of ingredient or supply requirements.
• Follow restaurant recipes, procedures, quality standards, and safety requirements.
• Train, guide, and support junior kitchen staff in sushi preparation and proper kitchen procedures when required.
• Lead the sushi preparation station and maintain efficient workflow during busy service periods.
• Respond professionally to customer preferences and special requests related to sushi orders.
• Maintain a clean, organized, and professional kitchen environment at all times.
• Perform other culinary and kitchen-related duties assigned by management.
