Iririki Island Resort & Spa is seeking an experienced and highly skilled Sous Chef to support the culinary team in Vanuatu. The successful candidate will help manage daily kitchen operations, supervise and develop kitchen staff, maintain food quality and presentation standards, control inventory and food costs, and collaborate with the Head Chef on menus and daily specials.

SOUS CHEF

Qualifications:

  • Minimum 3 years of relevant work experience.
  • Strong professional culinary background with experience in a Sous Chef or senior kitchen role.
  • Excellent knife skills and strong knowledge of professional food preparation techniques.
  • Comprehensive knowledge of global cuisines, protein cookery, and sauce-making.
  • Proficiency in food cost analysis, portion control, and menu planning.
  • Strong leadership and team management skills.
  • Ability to coach, train, and mentor kitchen staff.
  • Good knowledge of food safety, hygiene, sanitation, and proper food storage.
  • Strong attention to detail, particularly in food quality and presentation.
  • Excellent organizational and time-management skills.
  • Ability to work effectively under pressure in a fast-paced resort kitchen.
  • Creative and knowledgeable in developing daily specials and new menu concepts.
  • Physically fit and capable of standing for extended periods.
  • Responsible, professional, and committed to maintaining high culinary standards.

Responsibilities:

  • Lead the daily kitchen workflow and manage shift priorities to ensure smooth operations.
  • Supervise and coordinate line cooks, prep cooks, and other kitchen staff.
  • Coach, train, and mentor kitchen employees to improve their culinary skills and performance.
  • Monitor staff performance and assist in resolving workplace conflicts when necessary.
  • Inspect dishes before they leave the kitchen to ensure proper taste, temperature, quality, portion, and presentation.
  • Maintain consistent food preparation and plating standards across all kitchen operations.
  • Monitor ingredient and stock levels and ensure adequate supplies are available for daily production.
  • Manage food rotation and proper storage to maintain freshness and minimize waste.
  • Assist with procurement and ordering of food ingredients and kitchen supplies.
  • Monitor food usage and implement proper portion control to help manage costs.
  • Assist with food cost analysis and identify opportunities to reduce unnecessary expenses and waste.
  • Collaborate with the Head Chef to develop daily specials and new menu items.
  • Assist with menu planning and ensure recipes and preparation methods are followed consistently.
  • Apply strong knowledge of global cuisines, protein cookery, sauces, and various cooking techniques.
  • Ensure kitchen equipment, workstations, storage areas, and preparation areas are clean and organized.
  • Maintain compliance with food safety, hygiene, sanitation, and workplace safety standards.
  • Coordinate with service staff and other departments to ensure timely food preparation and delivery.
  • Support the Head Chef during busy service periods and special events.
  • Perform other culinary and kitchen management duties as assigned.
