Qualifications
- IELTS and OET passer with CBT qualifications is an advantage.
- Ability to speak and understand English to the IELTS 6.5 or equivalent
- Level 3 Food Preparation & Cooking SVQ or equivalent
- Intermediate Food Hygiene certificate
Responsibilities
- Take charge of the running of the kitchen in the absence of the head chef.
- Supervise operations and assist as required with the preparation, cooking and presentation of food in accordance with company standards.
- Assist the head chef as required.
- Responsible for: chef de partie/s, commis chef/s, kitchen porter/s
- Be familiar with the HACCP1 system and use it to effectively maintain food safety and hygiene standards in the kitchen.
- Oversee the operation of the kitchen and food service delivery to ensure company standards and product specifications are consistently achieved.
- Prepare, cook and present dishes in accordance with company specifications and as instructed by the Head Chef.
- Consistently maintain the highest standards of personal hygiene whilst at work.
- Ensure staff always follow the correct procedures when handling, preparing and storing food so as to minimise any risk of cross-contamination.
- Compile weekly rotas when required / in the absence of the Head Chef, ensuring staffing levels correspond to forecast business and that wage targets are achieved.
- Assist the Head Chef with the creation and implementation of all menus in line with company and departmental objectives.
- Manage stock in liaison with the Head Chef, ensuring that ordering, pricing, portion and waste control policies and procedures minimise wastage and maximise profits
- Participate in the monthly physical stock-take of food when required.
- Monitor staff to ensure that they comply fully with all regulations relating to Health and Safety, employees’ code of conduct, wearing of protective clothing, fire precautions and emergency procedures
