CHEF DE PARTIE (BUTCHER)

Qualifications:

• Minimum of 1 year work experience
• Asian cuisine- Chinese, Korean, Malaysian.

Responsibilities:

• Cut, trim, debone, and portion all types of meat, poultry, and seafood as per kitchen and menu requirements.
• Ensure consistency in meat cuts, portion sizes, and quality
• Maintain proper storage of raw and prepped proteins, including labeling, dating, and vacuum sealing when needed. Inspect and verify quality of meats received from suppliers.
• Work closely with the Sous Chef or Head Chef to forecast protein needs based on menu planning and volume.
• Maintain cleanliness and organization of the butchery area, tools, and cold storage.
• Ensure safe use and maintenance of knives, saws, grinders, slicers, and other butchery equipment. Implement and follow HACCP guidelines and food safety regulations at all times.
• Minimize wastage through proper trimming and use of meat cuts (e.g., bones for stock).
• Support the training and supervision of junior staff in butchery techniques.
