Sushi Maker / Sushi Chef

Qualifications:

• Female, age 21–34 years old.
• Previous experience in sushi preparation, Japanese cuisine, restaurant, hotel, supermarket, or food service operations is an advantage.
• Knowledge of sushi preparation, sushi rice, maki rolls, nigiri, sashimi, and basic Japanese food preparation techniques.
• Good knife-handling and food preparation skills.
• Ability to handle and prepare fish, seafood, vegetables, rice, and other sushi ingredients properly.
• Strong attention to detail, particularly in sushi preparation, portioning, and presentation.
• Knowledge of food safety, hygiene, sanitation, and proper handling of perishable food products.
• Ability to work efficiently in a fast-paced food service environment.
• Good communication and teamwork skills.
• Physically fit and capable of standing and performing food preparation duties for extended periods.
• Clean, organized, reliable, and responsible in handling food and kitchen equipment.
• Willing to follow company recipes, procedures, food safety standards, and management instructions.
• Able to work flexible schedules, including weekends and holidays as required.

Responsibilities:

• Prepare and assemble sushi, sashimi, maki rolls, nigiri, and other assigned Japanese food items.
• Prepare sushi rice according to established recipes and preparation standards.
• Handle, portion, slice, and prepare fish, seafood, vegetables, and other sushi ingredients properly.
• Prepare fillings, toppings, sauces, garnishes, and other sushi components.
• Roll and shape sushi products consistently according to required sizes and presentation standards.
• Use sushi knives and other kitchen tools safely and correctly.
• Maintain proper portion control and consistency in the preparation of sushi products.
• Arrange and present sushi attractively for display, takeaway, or customer service.
• Monitor the freshness, quality, texture, color, and appearance of ingredients and finished products.
• Ensure proper storage, labeling, temperature control, and handling of perishable ingredients.
• Follow food safety, sanitation, hygiene, and cross-contamination prevention procedures.
• Maintain clean and sanitized preparation surfaces, knives, utensils, equipment, and workstations.
• Prepare daily mise en place and ensure sufficient ingredients are available before service.
• Monitor ingredient levels and inform the supervisor of shortages or replenishment requirements.
• Assist with receiving and checking the quality of seafood, vegetables, rice, and other food supplies.
• Minimize food waste through proper preparation, portioning, storage, and ingredient handling.
• Follow standard recipes, preparation methods, food presentation requirements, and company procedures.
• Maintain proper hygiene and wear appropriate personal protective equipment (PPE) when required.
• Coordinate with other kitchen staff, food service personnel, supervisors, and management.
• Ensure sushi displays are properly replenished and maintained during operating hours.
• Respond professionally to customer requests and food-related inquiries when required.
• Assist with cleaning, closing, and other kitchen duties as assigned.
• Report food quality issues, equipment problems, safety hazards, or ingredient concerns to the supervisor.
• Perform other sushi preparation and kitchen duties assigned by management.
