SOUS CHEF (HOT & COLD)
Qualifications:
- Must have 5 years experience in Korean or Japanese Restaurant
- Preferably a culinary graduate or has diploma in Culinary Arts
- Minimum of 5 -7 years and above experience working in a similar volume-based business that represents global culture and consistent, approachable and elevated dishes
- Culinary-trained professional who is passionate and curious to develop and grow as a Chef.
- Over five years of experience as a Sous Chef, with expertise in Korean and Japanese cuisines.
- Proficient in Microsoft Office, and Advanced Excel using Conditional Formatting, Structure and Customise Templates, Data Validation, Creating Table Design and Cell Formatting is an advantage.
- Must be a culinary graduate or diploma in culinary arts equivalent.
Responsibilities:
- Delegating tasks and strategies for the kitchen that support the achievement of the food department goals.
- Engaged in the cost control system by maintaining accurate daily food preparations and purchasing
- Accountable for departmental performance and CIP, HACCP, and Food Safety Management
- Led, enforced and drove culinary processes for culinary training, menu development, recipe management, and stewarding management.
- Managing food operations and overall accountability for departmental team members’ performance.
- Streamline kitchen operations by creating precise practices for Food Safety, Food Cost Control, and standardised recipe files
- Oversees daily culinary preparations and supervises menu set-up for the events
- Standardized innovative production recipes to maintain the consistency of the menu to deliver outstanding service and guest satisfaction goals.
- Maintained the highest quality of food production and enhanced the presentation of all dishes served to the customers.
- Participated in and boosted the kitchen’s business strategy development.
- Directed all food preparations, cooking techniques, and food presentations to ensure exceptional food quality of the final dishes.
- Accountable with all safety regulations of assigned tasks to ensure a clean and safe working environment with active participation in the hotel health and safety program.
- Collaborate with the Head Chef to increase employee retention and to achieve the food cost up to 27%
- Worked together with the Head Chef and increased revenue.
- Succeeded in management and achieved the highest customer satisfaction scores, company goals and targets through monthly KPIs.
