Sourdough Pizza Chef
Qualifications:
- At least 4 years of relevant work experience.

- Knowledge of kitchen sanitation, food safety, and proper ingredient handling.
- Ability to work efficiently in a professional kitchen environment.
Responsibilities:
- Prepare sourdough pizza dough using flour, water, sourdough starter, and other approved ingredients.
- Maintain and feed sourdough starters according to established schedules and recipes.
- Monitor dough hydration, temperature, fermentation, and proofing times to ensure consistent quality.
- Measure and weigh ingredients accurately according to recipes and production requirements.
- Divide, portion, shape, and store dough properly.
- Monitor long-fermentation and cold-proofing processes when required.
- Hand-stretch and shape pizza dough without damaging its structure or compromising the crust.
- Prepare pizza sauces, cheeses, meats, vegetables, herbs, and other toppings.
- Assemble pizzas according to recipes, customer orders, and presentation standards.
- Operate and monitor wood-fired, gas, electric, and high-temperature pizza ovens.
- Adjust oven temperatures and baking times to achieve the desired crust texture, color, and doneness.
- Maintain consistency in pizza quality, flavor, appearance, and portion sizes.
- Keep kitchen workstations, utensils, and equipment clean and sanitized.
- Follow food safety, hygiene, ingredient storage, and kitchen safety procedures.
