Head Baker

Qualifications:

• Male applicants are preferred
• Proven experience as a Head Baker, Bakery Manager, or Senior Baker
• Strong experience with sourdough/mother yeast and stone-floor deck ovens
• Deep knowledge of baking techniques, ingredients, fermentation, and production methods
• Excellent skills in recipe development and standardization
• Strong leadership skills with experience in team management and scheduling
• Familiarity with food safety and hygiene regulations
• Excellent organizational and time-management skills
• Ability to work in a fast-paced environment and meet production deadlines
• Strong attention to detail and commitment to quality

Responsibilities:

• Lead and oversee all bakery production activities, ensuring consistent quality and timely output
• Prepare and bake a wide variety of products, with a focus on sourdough/mother yeast breads and artisan pastries
• Operate and manage stone-floor deck ovens and other bakery equipment
• Develop, test, and standardize recipes to maintain product consistency and efficiency
• Plan daily, weekly, and monthly production schedules based on demand forecasts
• Monitor and control ingredient usage and production costs
• Ensure compliance with food safety, hygiene, and sanitation standards
• Implement quality control measures to maintain high product standards
• Train, supervise, and mentor bakery staff, including bakers and assistants
• Manage inventory, order supplies, and maintain stock levels of raw materials
• Troubleshoot production issues and recommend improvements to processes
• Maintain clean, organized, and safe work environment
