Disney Cruise Line is seeking an experienced and dynamic Executive Sous Chef (Assistant Manager – Food Operations) to support the Executive Chef in leading high-volume culinary operations onboard. The successful candidate will oversee daily galley operations, maintain exceptional food quality and safety standards, supervise culinary teams, and ensure guests enjoy world-class dining experiences. This leadership role requires strong operational expertise, financial awareness, creativity, and the ability to inspire a multicultural team while delivering the exceptional hospitality for which Disney Cruise Line is renowned.
Executive Sous Chef (Asst. Manager Food Operations)
Qualifications:
- Minimum of 4 years of recent leadership experience in a comparable cruise line, 4- or 5-star hotel, or high-volume restaurant.
- Proven experience leading all aspects of high-volume culinary operations.
- Excellent knowledge of food and beverage products, culinary techniques, kitchen equipment, and food production systems.
- Strong understanding of food cost control, budgeting, forecasting, and financial performance.
- Ability to calculate and manage cost projections while understanding their impact on operational budgets.
- Experience promoting culinary innovation, production efficiency, revenue growth, and cost control.
- Skilled in preparing and supervising special dietary meals and food allergy management.
- Experience organizing food tastings, menu development sessions, and product trials.
- Strong ability to monitor food costs and implement cost-saving initiatives.
- Excellent leadership, organizational, analytical, and decision-making skills.
- Ability to handle guest complaints professionally while maintaining Disney’s exceptional guest service standards.
- Excellent communication and interpersonal skills with the ability to lead multicultural teams.
- Willing to work onboard Disney Cruise Line under a rotational contract.
Responsibilities:
- Assist the Executive Chef in managing the daily operations of all galleys and food production areas.
- Supervise chefs, cooks, and galley staff to ensure efficient and high-quality food preparation and service.
- Maintain consistency in food quality, presentation, taste, and portion control across all dining venues.
- Ensure the accurate preparation and service of special dietary meals and allergy-sensitive menu items.
- Organize and supervise food tastings, menu trials, and dummy runs for new recipes and menu offerings.
- Promote culinary creativity, menu innovation, and continuous improvement in food production.
- Monitor food production schedules to ensure timely service while maintaining operational efficiency.
- Control food costs through effective inventory management, portion control, waste reduction, and proper stock rotation.
- Analyze cost projections and support budget management to maximize operational performance.
- Monitor inventory levels and coordinate with provisioning teams to ensure adequate supply of ingredients and kitchen essentials.
- Ensure compliance with HACCP, USPH (United States Public Health), maritime sanitation regulations, and company food safety standards.
- Conduct regular inspections of galley cleanliness, sanitation, equipment, and food storage areas.
- Train, coach, mentor, and evaluate culinary staff to maintain high performance and professional development.
- Handle and resolve guest concerns related to food quality, dietary requirements, and dining experiences professionally and efficiently.
- Collaborate with Food & Beverage management and other onboard departments to deliver seamless guest service.
- Prepare operational reports, production summaries, inventory records, and performance evaluations.
- Perform other food operations management duties assigned by the Executive Chef or senior shipboard management.
