ASSISTANT SOUS CHEF
Qualifications:
- A minimum of 5 years of relevant working experience is required.
- Candidates must be a Bachelor’s / College Degree holder in Food and Beverage Preparation/Service Management or a similar field.
- Diploma or degree in Culinary Arts or a relevant culinary certification is required.
- Must have strong professional experience specializing in Western cuisine.
- Must have experience in food preparation, cooking, garnishing, plating, and food presentation.
- Must have experience in kitchen team supervision or leadership.
- Leadership training and certification is an advantage.
- Must have experience as a Service Crew, preferably with supporting certifications.
- Strong knowledge of food safety, hygiene, sanitation, and proper food-handling procedures.
- Knowledge of kitchen inventory, par stock management, ordering, and stock control.
- Strong leadership, team management, communication, and problem-solving skills.
- Able to motivate and organize kitchen staff to maintain efficient daily operations.
- Able to work effectively under pressure in a fast-paced restaurant environment.
- Good coordination and communication skills between kitchen and service teams.
Responsibilities:
- Support the Restaurant Manager in managing daily kitchen operations and addressing kitchen team concerns.
- Report kitchen team issues, operational concerns, staffing matters, and other relevant concerns to the Restaurant Manager.
- Check and maintain the proper grooming, hygiene, and professional appearance of kitchen team members.
- Notify the Restaurant Manager or designated assistant of necessary expenses, equipment requirements, and operational needs, particularly during the Restaurant Manager’s absence.
- Order necessary food, ingredients, supplies, and other kitchen goods accurately according to established par stock levels.
- Monitor inventory and stock levels and promptly report shortages, excesses, quality issues, or other inventory concerns.
- Organize and monitor food order lines to ensure accurate, timely, and efficient order fulfillment.
- Ensure proper food safety, hygiene, sanitation, and safe food-handling practices throughout the kitchen.
- Prepare and cook food according to established recipes, quality standards, and restaurant requirements.
- Specialize in and prepare Western cuisine while maintaining consistency in taste, quality, presentation, and portioning.
- Develop innovative ideas for new recipes, dishes, and menu improvements when requested.
- Instruct kitchen crew and other workers in food preparation, cooking, garnishing, plating, and presentation.
- Organize, supervise, motivate, and guide the kitchen team to maintain a smooth and productive cooking environment.
- Monitor kitchen performance and ensure food is prepared and served according to required standards.
- Act as an active link between the kitchen and service teams to ensure clear and effective communication.
- Coordinate with service staff regarding orders, special requests, food availability, and guest requirements.
- Monitor the quality and presentation of dishes before they are released from the kitchen.
- Notify the Restaurant Manager of equipment breakdowns, repairs, maintenance requirements, or other facility concerns.
- Follow up on necessary repairs and maintenance to help ensure kitchen equipment remains safe and operational.
- Prepare purchase or stock orders accurately and enter required information correctly into the appropriate system.
- Complete and maintain stock checklists and inventory records accurately.
- File and organize documents received, including supplier orders, instructions, inspection documents, memoranda, reports, and other kitchen records.
- Provide input in planning weekly restaurant work schedules and ensure important staffing and operational information is available in advance.
- Cooperate with the Restaurant Manager in checking and verifying team members’ time records.
- Assist in training and developing kitchen team members to improve their technical skills, discipline, productivity, and food preparation standards.
- Monitor compliance with restaurant policies, kitchen procedures, food safety requirements, and company standards.
- Perform other kitchen management and culinary duties assigned by the Restaurant Manager.
