SOUS CHEF – PASTRY SECTION

Qualifications:

• Male applicants are preferred
• 5 years progressive experience in pastry and dessert production, with at least 2-3 yrs in supervisory or head pastry
• Expertise in Pastry, Bread, Cakes, Desserts, Chocolate, Sugar Work, and plated Desserts.

Responsibilities:

• Assist the Pastry Chef in planning, coordinating, and supervising all pastry and dessert production.
• Support daily kitchen operations to ensure consistency, quality, and presentation standards of all pastry items.
• Supervise and guide pastry cooks, commis, and trainees, providing training and feedback to improve skills and efficiency.
• Help develop new recipes, seasonal menus, and innovative dessert presentations in collaboration with the Pastry Chef.
• Ensure proper portion control, freshness, and adherence to established recipes.
• Monitor inventory levels, assist with ordering supplies, and minimize food wastage.
• Enforce strict hygiene, sanitation, and safety standards in the pastry kitchen
• Assist in scheduling, delegating tasks, and ensuring smooth workflow in the pastry section.
• Step in to lead the pastry kitchen in the absence of the Pastry Chef.
• Work closely with other kitchen departments to coordinate timely service
• Conduct regular quality checks of baked goods, chocolates, confectionery, and plated desserts.
• Maintain equipment, tools, and work areas in excellent working condition.
• Uphold cost control and assist in maintaining food cost targets.
• Contribute to team development by motivating staff and promoting a positive, professional kitchen environment
