COMMIS I – TANDOOR

Qualifications:

• Minimum of 1 year work experience
• Asian cuisine- Chinese, Korean, Malaysian.

Responsibilities:

• Assist in preparing and smoking meats such as brisket, ribs, chicken, lamb, and seafood using wood, charcoal, or electric smokers. Help manage fire, smoke levels, and temperature control to ensure quality and food safety.
• Apply rubs, marinades, and sauces following standardized recipes.
• Handle mise en place for the smoker section (trimming, seasoning, portioning, wrapping, etc.).
• Monitor smoking durations, rest times, and doneness of each product.
• Maintain cleanliness and hygiene of smoker equipment, workstations, and tools.
• Ensure proper storage, labeling, and rotation of smoked and raw items
