HEAD BAKER (Japanese Artisan Bread / Shio Pan)

Qualifications:

  • Minimum 5 years of relevant baking experience
  • Vocational Diploma / Short Course Certificate or equivalent culinary qualification
  • Strong background in artisan bread and pastry production
  • Experience in Japanese-style baking techniques is highly preferred
  • Proven leadership experience in a bakery or production kitchen
  • Knowledge of food safety, hygiene, and HACCP standards
  • Ability to manage production targets and maintain consistent quality
  • Experience in equipment handling and bakery operations maintenance
  • Strong organizational and supply chain coordination skills

Responsibilities:

  • Lead the daily production of Shio Pan (Japanese salt bread) with a target output of 1,000+ units per day.
  • Develop and design Western-style pastries infused with Japanese flavor profiles such as:
    • Stone-ground Uji Matcha
    • Hokkaido sweet cream
    • Yuzu citrus
    • Sakura botanical ingredients
  • Execute full bread production processes including mixing, fermentation, proofing, shaping, and baking while ensuring consistency and quality.
  • Supervise, train, and mentor bakers and bakery assistants in Japanese artisan baking techniques.
  • Ensure strict compliance with food safety, hygiene, and sanitation standards at all times.
  • Operate, monitor, and maintain bakery equipment to ensure efficient and safe production.
  • Manage inventory, ingredient sourcing, supply chain coordination, and vendor relationships.
  • Maintain production schedules to meet daily output targets and customer demand.
  • Implement quality control measures to ensure product consistency, presentation, and taste.
  • Contribute to menu development and product innovation aligned with brand standards.
