Sous Chef – BBQ Specialist

Qualifications:

• Diploma or Certificate in Culinary Arts, Hotel & Restaurant Management or equivalent.
• Food Safety /HACCP training preferred

Responsibilities:

• Supervise and coordinate the activities of kitchen staff, particularly in the barbecue and grill section.
• Prepare, season, and cook meats such as beef, chicken, lamb, and seafood using smoking, grilling, and roasting techniques.
• Monitor cooking times, temperatures, and portion sizes to ensure consistency and quality.
• Develop and test new BBQ recipes, rubs, sauces, and marinades in collaboration with the Executive Chef.
• Ensure proper food storage, labeling, and rotation (FIFO) to maintain freshness and prevent waste.
• Oversee setup and cleanliness of the grill area and maintain all BBQ equipment in excellent condition the rest of the team to ensure efficient coordination during service, especially during busy periods
