Shawarma Expert (CDP)

Qualifications:

• Diploma or Certificate in Culinary Arts, Hotel & Restaurant Management or equivalent.
• Food Safety /HACCP training preferred
• Minimum 1–2 years of experience in an Arabic or Mediterranean kitchen preferred.

Responsibilities:

• Assist the Shawarma CDP in preparing, marinating, grilling, and slicing shawarma meats (chicken, beef, lamb, etc.).
• Prepare mise en place for shawarma items, sauces, salads, and breads before service.
• Follow recipe standards and portion control to ensure consistency in taste and presentation.
• Maintain cleanliness and organization of the shawarma station at all times.
• Support in setting up and dismantling the shawarma spit, grills, and related equipment.
• Ensure proper food storage, labeling, and rotation following HACCP and food safety guidelines.
• Assist in preparing side dishes and accompaniments such as garlic sauce, tahini, pickles, and Arabic bread.
• Monitor cooking times and temperatures to ensure food safety and quality.
• Work cooperatively with other kitchen staff to ensure efficient service during peak hours.
• Report any maintenance issues, shortages, or spoilage to the Chef de Partie or Sous Chef.
• Uphold hygiene, safety, and sanitation standards in all kitchen activities
